This red wine presents aromas of rose petals, plum, and fresh raspberries. The palate is infused with ripe cherry and orange peel flavors, with a silky texture and lingering finish. Copain’s philosophy of producing wines that give a nod to the Old World remains the course. The grapes were hand-harvested at the intersection of optimum flavor and great acidity. At the winery, the fruit was destemmed, sorted, and placed into open-top fermenters. The grapes were cold-soaked for 3 days to extract color and flavor. By day 5 spontaneous fermentation was underway. The tanks were gently pumped over twice daily throughout fermentation, and then drained and pressed to dryness. The wine was then aged to barrel for 10 months before bottling.
This vintage of the Tous Ensemble Pinot Noir is our first offering from the Sonoma Coast appellation. Taking what we learned the previous year and isolating our favorite blocks in the vineyard, we were able to take the wine to the next level of quality. The goal for this blend is a red wine that is true to the Copain style of being an elegant expression of Pinot Noir, yet a bit more friendly to drink upon release.
